the matcha

we buy and pack our matcha in small batches, so it spends as little time as possible waiting in storage.

the exact lot number and best-before date are printed on every tin. harvest and production details are also included on the product page whenever they are available, so you can check the information for the matcha you’re actually buying rather than relying on a vague “fresh” claim.

once opened, your matcha will taste its best within six to eight weeks.

a 2 g serving of matcha generally contains around 40-70 mg of caffeine.

the exact amount varies naturally between matchas and depends on how much powder you use. if you are pregnant, breastfeeding or particularly sensitive to caffeine, check with an appropriate healthcare professional.

no additives. the only ingredient is 100% japanese green tea.

there are no added sweeteners, colours, flavourings or preservatives. the matcha is vegan and gluten-free by ingredient.

always check the label on your tin for the latest ingredient and allergen information. if you have a severe allergy and need information about packing or possible cross-contact, email [email protected] before ordering.

yes. every matcha is tested by an independent laboratory for pesticide residues, heavy metals, microbiological quality, including relevant bacteria, and pyrrolizidine alkaloids, also known as pas.

the results must meet the applicable eu limits before we sell the lot.

making it

each tin contains 30 g of matcha.

that makes around 15 cups using our usual 2 g serving, or up to 20 lighter cups using 1.5 g. if you use 3 g for a matcha latte, you’ll get around 10.

sift 1.5-2 g of matcha into a bowl, then add 60-70 ml of water at around 70-80°c.

whisk quickly from the wrist in a loose zigzag until the matcha is smooth and a fine foam appears.

that is our starting point, not a strict rule. use a little more water for a lighter cup or a little less if you like it stronger.

sift 3 g of matcha into a bowl or glass. add around 40-60 ml of water at 70-80°c and whisk until completely smooth.

add 100-150 ml of your preferred milk, depending on how strong you like it.

for an iced latte, add the milk and ice to your glass first, then pour the whisked matcha over the top.

no. a bamboo whisk is the easiest way to make matcha smooth with a fine, even foam, but it is not the only way.

you can also use a handheld electric frother or shake the matcha and water in a securely closed bottle or jar.

if you are using the shaking method, use warm or cold water - never very hot water in a sealed container.

a few small clumps are completely normal. matcha is extremely fine and quickly attracts moisture from the air.

sifting it before adding water makes the biggest difference. you can also begin with a small amount of water and mix the matcha into a smooth paste before adding the rest.

always use a clean, dry spoon and close the tin properly when you are finished.

start by sifting the matcha, then use water at around 70-80°c. whisk quickly from the wrist in a loose zigzag rather than slowly stirring in circles.

your bowl also matters. a wide bowl gives the whisk more room to move.

some matchas naturally produce more foam than others, so a thinner layer of foam does not automatically mean there is anything wrong with the matcha.

keep the tin tightly closed somewhere cool, dry and dark. a kitchen cupboard away from the oven, kettle and direct sunlight is usually perfect.

protect it from heat, steam, moisture and strong smells, and always use a clean, dry spoon.

you do not need to refrigerate an opened 30 g tin if you are using it within six to eight weeks and keeping it somewhere cool, dry and dark.

if your home gets particularly warm, you can keep the tin in the fridge. make sure it is completely airtight and let it reach room temperature before opening it. this helps prevent condensation from forming inside the tin.

for the best colour, aroma and flavour, try to finish your matcha within six to eight weeks of opening.

it does not suddenly become unsafe after that point. it will simply begin to taste quieter and may gradually lose some of its colour.
