minamo comes from ujitawara, a tea town tucked between the mountains of southern kyoto. tea has been grown here for centuries, and the town played an important part in the development of the sencha-making method that shaped modern japanese green tea.
made from locally grown okumidori, samidori and tsuyuhikari, minamo is shaded before harvest and slowly stone-milled. the three cultivars come together in a soft, rounded matcha with chestnut warmth, buttery richness and a fresh snap-pea finish. it is smooth as usucha and keeps its flavour beautifully in milk.
the farm takes a reduced-pesticide approach, and this lot was tested for pesticide residues. all detected levels were below the applicable eu maximum residue limits.
